This summer I have been trying to increase my veggie intake by having salads for lunch, but baby lettuce and spinach start to get boring after a while. So I started scouring the web for different salad recipes to mix things up a bit. This one I found got rave reviews, is super easy to make, and tastes great! The only downside is that it is very low in calories so it's not very filling for a meal, though it works great as a side or a snack.GREEN PEPPER AND TOMATO SALAD
Ingredients:
- 3 medium tomatoes, seeded and chopped
- 1 medium green pepper, chopped
- 1 celery rib, thinly sliced
- 1/2 cup chopped red onion
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
In a large bowl, combine the tomatoes, green pepper, celery and onion. In a small bowl, combine the vinegar, sugar, salt and pepper. Stir into tomato mixture. Cover and refrigerate for at least 2 hours, stirring several times. Serve with a slotted spoon.
Yields: 6 servings
